What Is Andō Momofuku Day?

Every March 5th is also "Andō Momofuku Day" (安藤百福の日, Andō Momofuku no Hi) in Japan. The date marks the birthday of Andō Momofuku (安藤百福, 1910–2007) — the Japanese-Taiwanese entrepreneur who invented instant noodles (インスタントラーメン, instant rāmen) in 1958 and cup noodles (カップヌードル) in 1971, creating what became one of the world's most consumed foods. Andō's inventions — born from observation of postwar food shortages and the desire to create affordable, convenient, satisfying noodle food — are now eaten by approximately 100 billion servings annually worldwide.

The Invention of Instant Noodles

Andō Momofuku invented instant noodles in 1958 after months of experimentation in a small shed behind his house in Osaka. The key innovation was "flash frying" — partially cooking noodles in oil at high temperature, which dehydrated them in a way that allowed rapid reconstitution in hot water while preserving a satisfying texture and flavor. The first product, "Chikin Ramen" (チキンラーメン, chicken ramen), went on sale in August 1958 — priced at 35 yen per packet, considerably more expensive than a bowl of ramen at a restaurant, but enormously popular for its convenience.

The Cup Noodle Revolution

If instant noodles were Andō's first great invention, the Cup Noodle was his second. In 1971, observing American businesspeople breaking instant noodles in half to fit them in a paper cup of water, Andō conceived of building the serving vessel into the product — creating the Styrofoam cup with noodles inside that could be prepared by simply adding hot water. Cup Noodle (カップヌードル) revolutionized convenience food globally, becoming the world's best-selling single food product and inspiring countless competitor products.

Andō's Legacy

Andō Momofuku died in January 2007 at age 96, still actively working at Nissin Foods. His inventions have had an extraordinary impact on global food culture — providing affordable, shelf-stable calories in a format accessible to virtually anyone with hot water. The Cupnoodles Museum (カップヌードルミュージアム) in Yokohama and Osaka celebrates his story and allows visitors to create their own cup noodle flavors.

• Space noodles: Andō's final invention before his death was "Space Ram" — instant noodles designed for consumption in zero gravity aboard the International Space Station. Japanese astronaut Soichi Noguchi took Space Ram to the ISS in 2005, fulfilling Andō's dream of noodles in space.
• Most important invention: A 2000 survey of Japanese people asking "what was Japan's greatest invention of the 20th century?" ranked instant noodles first — ahead of karaoke, the Walkman, and the Shinkansen, reflecting the profound impact that Andō's invention has had on daily life worldwide.
