Calves are bought from Hyogo and other prefectures across Japan, and those from Hyogo fattened for 900 days or more are called "Tokusan Matsusaka beef." The identification system began in 2002 in response to the BSE scare of 2001 and food-labeling fraud, recording details such as each animal's birthplace, farmer, and fattening period from arrival to shipment.
