What Is Osaka Sushi Day?

September 15th is "Osaka Sushi Day" in Japan. Established by the Kansai Atsuyaki Industrial Association, which supplies ingredients such as thick rolled omelet for Osaka sushi, and certified by the Japan Anniversary Association, the date was chosen because September 15th was formerly Japan's "Respect for the Aged Day," and Osaka-style sushi is prized as a dish that even elderly people can enjoy without worry.

A Gentler Sushi Tradition, Free of Raw Fish

"Osaka sushi" refers to a family of sushi styles native to the Kansai region, including box sushi (hako-zushi) and pressed sushi (oshi-zushi).

  • Origin: The Kansai Atsuyaki Industrial Association designated September 15th—once celebrated as Respect for the Aged Day—as Osaka Sushi Day
  • Characteristics: Unlike Edo-style nigiri sushi topped with raw fish, Osaka sushi centers on box and pressed sushi made with thick rolled omelet and cooked or vinegar-cured sea bream, conger eel and shrimp, sometimes served with date-maki and thick rolls
  • Appeal: Because it contains no raw fish, Osaka sushi is a dish that elderly people and young children alike can enjoy with peace of mind

Sushi Pressed by Hand, Osaka-Style

Osaka sushi is made using a distinctive technique: vinegared rice and toppings are packed into a wooden mold and pressed firmly into shape. The result is a sturdier texture and a strikingly neat appearance compared to nigiri sushi, making it a popular choice for celebratory occasions. With its colorful arrangement and well-balanced flavors, it is sometimes described as a "mini kaiseki meal."
