What Is Fermentation Day?

Every May 24th is "Fermentation Day" (菌活の日, Kin-katsu no Hi) in Japan. On May 24, 2013, mushroom producer Hokuto Corporation (株式会社ホクト) proposed and popularized the term "kin-katsu" (菌活) — literally "microorganism/fungus activity" — to describe the practice of actively incorporating fermented foods and fungi into one's diet to improve health. The day was designated to promote awareness of the health benefits of fermented foods and the rich tradition of fermentation in Japanese cuisine.

Fermentation in Japanese Food Culture

Japan has one of the world's richest fermentation traditions — arguably the country with the greatest variety of fermented foods integrated into everyday cuisine. Core fermented products include miso (味噌, fermented soybean paste), soy sauce (醤油, shōyu), sake (日本酒, fermented rice wine), mirin (みりん, sweet rice wine), rice vinegar (酢), natto (納豆, fermented soybeans), tsukemono (漬け物, fermented pickles), and katsuobushi (鰹節, dried fermented skipjack tuna). Each involves complex microbial activity — bacteria, yeasts, and molds — that transforms raw ingredients into foods of extraordinary depth and flavor.

Koji: The Heart of Japanese Fermentation

At the center of Japan's fermentation tradition is koji (麹) — the mold Aspergillus oryzae, which grows on steamed rice or soybeans and produces enzymes that break down starches and proteins. Koji is the starting point for sake, miso, soy sauce, mirin, sake vinegar, and many other fermented products. Japanese fermentation expertise, centered on the management of koji and the complex microbial communities it supports, represents thousands of years of accumulated practical knowledge.

The Science of Fermented Health

Contemporary nutritional science has validated many of the health benefits of fermented foods — probiotic bacteria, bioavailable nutrients produced by fermentation, and prebiotic compounds that support gut microbiome health. Japan's "kin-katsu" concept — proactively incorporating fermented and fungal foods into daily diet — aligns with global scientific interest in the gut microbiome's role in overall health.
