What Is Soba no Hi?

December 31st is "Soba no Hi" (Soba Noodle Day), established by the Japan Soba Association. The day aims to preserve the culture of "Toshikoshi Soba"—the New Year's Eve tradition of eating soba noodles—and to spread the appeal of soba more broadly. Toshikoshi soba is a traditional dish eaten for good luck, its long, thin noodles symbolizing "a long life and long-lasting good fortune." The custom is believed to have become widespread during the mid-Edo period, around the early 1800s.

The Origins and Meaning of Toshikoshi Soba

• A Symbol of Longevity: The long, thin noodles symbolize "a long life and enduring good relationships."
• "Easily Cut" = Cutting Off Bad Luck: Because soba noodles break easily, eating them is also said to mean "cutting off this year's hardships and misfortune."
• A Theory About Wealth: Goldsmiths once used soba flour to gather scattered gold dust, giving rise to the association of soba with "gathering wealth."
• Etiquette: It's considered bad luck to carry soba noodles over into the new year, so the custom is to finish eating them before midnight on New Year's Eve.

Types of Toshikoshi Soba

• Kake Soba: A simple version served in hot broth, garnished with condiments like green onion and wasabi.
• Tempura Soba: A more luxurious version topped with shrimp tempura or kakiage (mixed vegetable and seafood tempura).
• Kamo Nanban Soba: Featuring a rich broth infused with the flavors of duck meat and long green onion.
